Simple, Fun and Cute Easter Biscuits

As you all know I love any opportunity to bake and Easter was no exception – I made these cute little iced biscuits yesterday inbetween Sunday lunch and egg painting.

This fun, quick and straightforward recipe can be also be adapted to include mixed currents, cinnamon and nutmeg to give your biscuits a more traditional feel this Easter. 

Ingredients – 
200g butter, 150g caster sugar, 2 large egg yolks, 400g plain flour, 3-5 tbsp milk, icing sugar, a selection of food colouring, decorations and icing pens.

1. Preheat oven to 180C. Line two baking trays with grease proof paper.

2. Cream sugar and butter together until light and fluffy. Beat in the egg yolks and then sieve in the flour. Add any spices or dried fruit of your choosing at this point.

3. Slowly add milk and use your hands to bring the soft dough together.

4. Roll out onto a lightly floured surface and cut into shapes using novelty cutters (I found mine in Poundland). 

5. Sprinkle with caster sugar and leave to bake for around 15 minutes or until lightly golden on top. Once baked transfer onto a wire rack to cool.

6. Once cool, it’s time for my favourite part – the decorating! I made a simple batch of icing sugar, divided it into separate bowls and mixed in several colours of food colouring. I didn’t use a lot as I wanted my icing in pastel colours. I then covered my biscuits with icing on the cooling rack and allowed it to drip over the sides covering the whole biscuit. I popped these in the fridge to set and then added the extra details later. Simple, pretty little biscuits that are lots of fun to make and which the whole family can help to make!
